César Troisgros, born November 5, 1986 in Roanne, is the eldest son of Michel and Marie-Pierre Troisgros. He is a chef.
César trained at the Institut Paul Bocuse before continuing his culinary apprenticeship at
Michel Rostang in Paris, El Celler de Can Roca in Girona, Spain, The French Laundry in
Napa, and with his uncle Claude Troisgros in Rio de Janeiro. In 2011, he returned to Roanne
and worked his way up from Chef de Partie to Sous-Chef to Chef de Cuisine at the family
restaurant. He played a large role in the family’s relocation to Ouches in 2017 and became solely responsible for the restaurant Le Bois sans feuilles in 2023.
César is greatly interested in ecology and biodiversity, and worked with the organic association of Roanne in safeguarding the nearly extinct “Auvergne” bean variety. He is the vice-delegate and Chef ’s representative for “Relais & Châteaux” in the Grand-Est Rhône-Alpes region of France. In 2019, he was inducted as a Chevalier into the Order of Agricultural Merit.
César enjoys sports and music, and is passionate about fine arts, wine, and world cuisine.
